Abstract
Un procedimiento de esterilizacion de un producto alimenticio de bajo tenor de agua especialmente chocolate o análogos del chocolate, contaminado conmicroorganismos, que comprende: elevar la actividad del agua (Aw) de dicho producto alimenticio a unvalor superior a aproximadamente 0,7 de preferencia superior a 0,8 someter el producto alimenticio hidratado a una etapa de esterilizacion térmica y eliminar el agua de manera de recuperar un producto alimenticio debajo tenor de agua esencialmenteés teril que presenta una contaminacion especialmente de bacterias esporuladas que es por lo menos 1000 veces inferior (3log) ala del producto contaminado de partida, particularmente a 1 UFC/g. Además se da a conocer un producto alimenticioesterilizado así como también composicionesalimenticias que comprenden a dicho producto.
