Abstract

PURPOSE: To sterilize a food material of a dried fish, shellfish and/or spice, by heat-treating the food material with an adjusted moisture content to be sterilized in an extruder at a specific temperature under pressure.
CONSTITUTION: A dried fish, shellfish and/or spice, e.g. a dried small sardine, dried and smoked fish, pepper ginger or onion, are adjusted to a moisture content of 10W40%, and then heat-treated in an extruder at 100W160°C for 20W 90sec. In this case, a low pressure ≤20kg/cm2 is enough for the heat treatment.
