Abstract

PURPOSE: To carry out the aseptic cooling of a hamburger steak, without lowering its quality and palatability, in high rate of extermination of bacteria even by the sterilization at a low temperature, by adjusting the pH of the formed hamburger steak at a specific level, roasting to raise the surface temperature, steaming, and cooling the product in an aseptic chamber.
CONSTITUTION: A hamburger steak is formed e.g. to a sheet, and heated to an extent to effect the denaturation of the surface by roasting. The pH of the hamburger is adjusted to 5.0W6.7 before the heating. The roast hamburger steak is steamed at 80W100°C for 4W50min. The sterilized hamburger is introduced into an aseptic chamber, cooled with chilled air to 10W25°C, packed in the chamber, and taken out of the chamber. When the pH of the hamburger is ≥6.7, the sterilization becomes incomplete under the above conditions, and when it is ≤5.0, the meat quality of the hamburger is lowered, the acid taste is increased, and the quality of the prepared hamburger steak becomes poor.
