Abstract
PURPOSE: To sterilize efficiently only the surface of a food, by subjecting the food with its surface impregnated with a solution of salt to microwave heating.
CONSTITUTION: After perishable foods such as edible meat, etc. are cut, the foods are immersed in a solution of salt in a short time so that only their surface parts are impregnated with the solution of salt. When they are irradiated by microwave heating, only the parts impregnated with the solution of salt having high dielctric loss are heated, so that only the surface parts are sterilized under heating by the short-time irradiation. The treatment is also effective for sterilizing perishable foods before freezing.
