Abstract
PURPOSE: Food is dipped in a liquid coolant below -20°C to effect economical freezing with no destruction of tissues of the food.
CONSTITUTION: As a coolant, is used an aqueous solution of a salt such as sodium chloride or calcium chloride. The coolant is cooled below -20°C and food such as vegetables, fruits or fresh fish are directly dipped therein.
