Abstract

PURPOSE: To prepare a frozen bonito having the same freshness, shape, and quality of meat as a fresh one, by precooling a bonito, from which the head and the entrails are removed, with cold seawater, by by sealing up the rapidly frozen dressed meat, and by freezing and storing the pack.
CONSTITUTION: A bonito, from which the head and entralis are removed, before the stiffening, is precooled with cold seawater at 0W-4°C within 40min, and the blood is drained into the water and precipitated. The body is then taken out, quickly divided laterally along the backbone. All the bones are removed to give the upper and lower slices which may be halved if desired. The resulting slices are rapidly and completely frozen at -60°C or below for 5W7hr, sealed or vacuum- packed, and frozen and stored at -45°C or below.
