Abstract

PURPOSE: Water-containing food is rapidly cooled to a specific temperature, then gradually frozen to keep the water-containing food the fresh state at the beginning for half to one year, thus enabling the freeze-storage of "sushi" or other food.
CONSTITUTION: Water-containing food such as fresh fish, meat or hand-rolled sushi is cooled to -80W-10°C in 3W5min and dipped in an aqueous solutin containing an unfastening agent to form ice capsules around the food resisting the swelling pressure caused by freezing. Further, the above temperature is kept for 7W 10min to lower sharply the temperature at the center of the food to -6W-15°C. Then, the cooling temperature is set to -25W-35°C and kept at the same temperature for 40W80min to gradually lower the center temperature to about -20°C and the food is stored at this temperature.
