Abstract

PURPOSE: To freeze a raw egg as it is, by incorporating a seasoning, a spice, etc, in the raw egg, coating the egg with agar or gelatin, and subjecting the coated egg to the primary and secondary freezing steps.
CONSTITUTION: A fresh egg is disinfected, sterilized, washed with water, and immersed in a spice solution prepared by boiling and sterilizing a seasoning, a spice, e.g. common salt, sodium glutamate, spice, ginger or cinnamon, cooling and adding an edible enzyme, e.g. bromelain or papain enzyme, thereto for a given time. After washing with water, the egg is then immersed and coated with a 5W8% solution of agar or gelatin, dried with hot air at 20°C or below, encased, frozen at -2W-5°C for 24hr as the primary freezing step, frozen at -10°C or below as the secondary freezing step, and then stored at the temperature till the use for food.
