Abstract
PURPOSE: To prevent the shape collapse and improve the texture with a concentrated sugar seasoning, by drying slices of a buna salmon (a matured blackish salmon) quickly at a low temperature, tightening the surface muscular fiber temporarily, and roasting the slices immediately to cause the thermal denaturation of protein.
CONSTITUTION: The entrails of a buna salmon (a matured blackish salmon) are removed in the first step, and the body is washed with an artificial salt water in the second step, and frozen in the third step. The body is then thawed naturally in the fourth step and divided into two pieces of flesh and the bone to give slices in the fifth step. The resultant slices are then dried in a low-temperature and dehumidifying dryer in the sixth step, roasted by a continuous fish roaster in the seventh step, and then immersed in a seasoning consisting of an amino acid and sugar essentially in the eight step. The seasoned slices are vacuum-packed or packaged in a keg or box to give a product.
