Abstract

PURPOSE: To prepare a food of delicate flavor like a sea urchin having high keeping quality, by kneading a granular vegetable protein of fine grain size with an edible oil and a ground fish meat diluted with water, seasoning the mixture like a sea urchin, and heat-treating the seasoned mixture.
CONSTITUTION: 100pts.wt. granular vegetable protein having a grain size of 10 mesh or less is kneaded with 20W100pts.wt. edible oil and 50W200pts.wt. ground fish meat diluted with water in an amount of 1/2 to one time that of the fish meat, and seasoned with a sea urchin flavor, etc. to give a flavor like a sea urchin. The seasoned mixture is then heated in oil or boiled and heated in oil or boiled and then dried with hot air.
