Abstract

PURPOSE:To obtain a food having an appearance and texture resembling a seasoned sea urchin egg from an inexpensive raw material, by subjecting a particulate vegetable protein having a specific small particle size, an edible fat and oil and ground fish meat as the raw material to a specific treatment. CONSTITUTION:A particulate vegetable protein having a small particle size of 10 mesh or less, is seasoned, and kneaded with an edible fat and oil and ground fish meat diluted with water in an amount of 1-3 times that of the meat. The mixture is steamed to give a food like a seasoned sea urchin egg. The protein is prepared from a protein composition available from soybeans or wheat by the conventional method. Soybean oil, rapeseed oil or lard may be cited as the edible fat and oil, and used in an amount of 20-100 parts by wt. per 100 parts by wt. of the protein. The ground fish meat is prepared by adding 150-250 parts by wt. of water to 100 parts by wt. of the meat and by milling the mixture with common salt in a meat mill.
