Abstract

Chipped potatoes and the like, e.g. potato crisps, game chips, puffed potatoes, are made by mixing cooked, dried potato powder which is reconstitutable on the addition of water to mashed potatoes with a quantity of water insufficient fully to reconstitute the powder under such conditions that a dough is formed, this dough is rolled or shaped to coherent pieces of the desired shape and size, and the pieces are fried in fat or oil. If the powder contains insufficient burst starch granules for the formation of a dough, the water to be added is heated to cause bursting of startch granules and liberate sufficient gelatinized starch or, alternatively, an adhesive such as pectin, gelatine, gum arabic, casein, or albumen may be added. Seasoning and flavouring substances, e.g. salt, pepper, meat extract, may be incorporated in the dough. Specification 566,167 is referred to.
