Abstract
PURPOSE: To prepare a snack-like foamed food, by mixing a given amount of starch with ground fish meat or/and cattle meat, adding an expanding agent to the resultant mixture, molding the resultant mixture, and cooking the molded mixture under heating in oil.
CONSTITUTION: A starch, e.g. potato starch or corn starch, in an amount of 60W150wt% based on a ground fish meat or/and cattle meat is added to the ground fish meat /or and cattle meat. The resultant mixture is then mixed with a seasoning, expanding agent, water and/or egg white, molded and then cooked under heating at 110W140°C in an edible oil.
