Abstract

PURPOSE: An adequate amount of albumen is added to fish meat and they are kneaded to reform the structure, thus producing fish processed food showing unchangeably, good texture and taste.
CONSTITUTION: To 100 parts by wt of fish meat, preferably slicles, are added 5W 50, preferably 10W30 parts of albumen, calculated as fresh albumen, further salt, when desired, flavoring, spice, colorant, binder, fat or oil, strach, etc. and they are ground and formed into desired shapes using forming machine or freezing pan. The formed product is gradually freezed to form fibrous or laminar structure characteristic in fish meat and then heated to fix the structure.
