Abstract
PURPOSE: Feet and edge parts of cuttlefish are used as starting materials to prepare a roasted cuttlefish product that has a taste just like SURUME (dried SURUME cuttlefish) without fibrous texture like SURUME and is suitable for drinking Japanese SAKE.
CONSTITUTION: Feet and edge parts of fresh cuttlefish are peeled and their flesh is frozen or directly cut into pieces, then, when necessary, other frozen ground fish meat is combined therewith as a binder. Further, salt, sugar, MIRIN (sweetened Japanese SAKE for cooking), flavors and spices are added and they are kneaded, then formed into a desired shape. The shaped product is roasted under pressing once or a few times between hot plates or preheated, then roasted between hot plates under pressing to lower the water content to 20W60%.
