Abstract
PURPOSE: Ground flesh of fish and short-cut fibrous or granular material seasoned with meat flavor are combined with a binder of particles of edible fat to produce said meat substitute like meat for steak in texture and taste.
CONSTITUTION: Ground flesh of fish is combined with meat flavor such as cattle liver, blood or flesh essence and they are made into paste of short-cut fiber or granule 2. When necessary, ground meat of cattle is added thereto and the resulting product together with edible fat 3 such as "Kenne" is made into bundles using a binder consisting of ground fish meat seasoned with meat flavor for such as beef. The bundles are tightly surrounded with thin layers of edible fat and boiled, then cut into slices.
