Abstract
PURPOSE: To provide food resembling a natural shrimp in feeling to the palate, taste, and flavor, by bonding peeled tiny shrimps or shrimp offal with a binder composed of ground shrimp, ground and dried fish meat, and egg white, to the shape of a peeled large-size shrimp.
CONSTITUTION: Peeled tiny shrimps or shrimp offal are formed to lumps 1 of proper size, and mixed with a pasty binder 2 composed mainly of ground shrimp, ground and dried fish meat, and egg white. The mixture is formed to the size and shape of a peeled large-size shrimp, and if necessary, heated to bond the lumps. The amounts of the ground and dried meat and the egg white are pref. 5W30% and 10W30% of the ground shirmp, respectively. The meat mixture is pref. mixed with 0.1W0.5% of a condensed phosphate and 0W1% of table salt, and stirred lightly to improve the water retainability.
