Abstract

PURPOSE: To prepare a fish-paste product reduct resistant to losing elasticity, and having high stability and preservability, by adding a specific amount of soybean protein to the meat of fish selected from mackerel, mackerel pike, and sardine, and heating the mixture in two steps.
CONSTITUTION: Meat of fish selected from mackerel, mackerel pike, and sardine, e.g. pref. fish meat treated with an alkali or ground fish meat free from salt, is mixed with 1W20%, pref. 3W10%, based on the weight of the fish meat, of soybean protein, and the mixture is heated in two steps, e.g. first at 5W45°C, and then at ≥70°C.
