Abstract
PURPOSE: To manufacture food having excellent taste and nutrient qualities, by heating milt of fish added with salt for a short time.
CONSTITUTION: Milt of fish such as mackerel, cod, sardine, bonito, etc. (optionally ground milt) is added with about 1W3% of salt, aged for about 10W24 hours pref. at a low temperature, and heated at about ≥120°C for a short time.
