Abstract

PURPOSE: To prepare processed starch having high viscoelasticity and aging resistance, and suitable as starch for adding to meat paste, especially fish paste, by adding raw soybean flour to starch, and heating the mixture under hydrous condition.
CONSTITUTION: Starch is added with 0.1W20%, pref. 0.3W3% of raw soybean flour, and the mixture having the initial water-content of ≥8%, pref. 15W25% is heated pref. at 60W80°C for 3W6hr.
