Abstract
PURPOSE: To prepare macaroni having beautiful yellow color and excellent palatability, by compounding the raw flour of macaroni with yellow corn flour having specific α-starch content.
CONSTITUTION: Raw flour of macaroni is compounded with 5W40%, esp. 15W30% of yellow corn flour having an α-starch content of 20W50%, esp. 30W40%, and processed to obtain macaroni by the conventional process.
