Abstract
PURPOSE: Raw potatoes are treated with acetic acid to increase the commercial value because the potatoes whose starch has been converted into α-form hardly go into pieces even when dressed with mayonnaise and do not generate bad odor.
CONSTITUTION: Raw potatoes, which may be peeled or made into appropriate forms, are dipped into a 0.05W0.1% acetic acid solution and heated to convert the starch into the α-form or heated under being dipped in the solution, for example, the concentration is 0.05 and the time is 3W4hr at room temperature or 10W20min after boiling under heating.
