Abstract

PURPOSE: After it has been sterilized by heating, a juice containing solid substances such as segment membranes and pulps is subjected to drum drying to produce flakelike dried juice that forms neither cakes by moisture absorption nor undissolved powder lumps when water is added thereto.
CONSTITUTION: Citrus fruits are selected, washed with water, peeled, and squeezed to give a crude juice containing about 20% of solid component. The crude juice is sieved by the use of a 40W80 mesh sieve so that the solid component sieved out becomes over 30%. The resultant juice is sterilized by heating at 80W95°C for 20secW3min, subjected to drum drying, and peeled out of the drum as frakes. The frakes of dried juice are cut into pieces of almost the same shape or several sheets of the frakes are piled up and punched into tablets. The drying in the drum dryer is effected within 30min to make the water content less than 1% where the temperature is preferably 80W110°C and the time is about 6min.
