Abstract
PURPOSE: To improve the powdering efficiency and to obtain powdered food having improved transparency in dissolving the product, by using a waxy corn starch which is saccharified with an enzyme as an assistant.
CONSTITUTION: Waxy corn starch, which is saccharified to a degree of saccharification (DE) of about 10W25 as a main constituent, is used together with a vegetable gum, e.g. acacia or locust bean gum, if necessary as an assistant for powdering liquid food and drink by the well-known method.
