Abstract

PURPOSE: To reduce the viscosity and solid content of a starchy raw material, by pulverizing the starchy raw material prior to the saccharification step, liquefying the material with α-amylase, and subjecting to the enzymatic reaction with cellulase and polygalacturonase.
CONSTITUTION: Starchy raw material such as cassava, corn, sweet potato, white potato, etc. are finely crushed, mixed with water to obtain a suspension, and liquified by heating in the presence of α-amylase in an amount sufficient for the liquefaction. The liquefied suspension is added with cellulase and polygalacturonase, and subjected to enzymatic reaction. After the completion of the reaction, the product is centrifuged to separate the precipitable solid. The amount of solid separated by centrifugation can be remarkably reduced by the enzymatic treatment, and the produced solution is extremely clear and has remarkably reduced viscosity.
