Abstract
PURPOSE: To produce alcoholic liquors at low cost with the deletion of treatment of raw material such as steaming, by a method wherein grains or other starchy raw materials are converted to α-form by using an extrusion-type pressure steaming machine and simultaneously dried, and then the dried product is saccharified and fermented.
CONSTITUTION: Starchy raw materials such as grains, dried potatoes, and starch which can usually be converted to dried state are used as such, or are wetted to a minimum extent mecessary for reforming. Then the starchy raw materials are converted to α-form by using an extrusion-type pressure steaming machine and simultaneously dried. The resulting dried materials are saccharified and fermented in a usual manner. As high shearing force is applied to the raw materials at an elevated temperature under high pressure, a product is obtained in which cell tissue and starch granule structure are greatly destroyed. This product is digested very easily by amylase. Thus, the utilization of the raw materials in the production of alcoholic liquors can be improved.
