Abstract

PURPOSE: To carry out the gelatinization and saccharification of starch without heating, by adding an agent which breaks the hydrogen bond of starch and has essentially no influence to the activity of enzyme, e.g. a urea solution, to starch or grains which are not steamed or boiled, and then saccharifying the gelatinized starch prepared above with enzyme.
CONSTITUTION: Starch or grains which are not steamed or boiled, are suspended in an agent which breaks the hydrogen bond of starch and has essentially no influence to the activity of enzyme, e.g. a urea solution, and left to stand for 1 day with occasional stirring, to effect the gelatinization and swelling of the starch. The gelatinized starch is saccharified by adding an enzyme or an enzyme-containing material necessary for the saccharification, e.g. alpha-amylase, glucoamylase, etc. to the starch.
