Abstract
PURPOSE: To prepare a hypha mass extract of an agaric and powder thereof useful for food as a kind of seasoning added thereto, by adding water to an agaric hypha mass cultivated in a culture medium containing wood sawdust, rice bran, etc., boiling the hydrated hypha mass, and concentrating the resultant extract.
CONSTITUTION: Water is added to a mixture of nutrient sources, e.g. sawdust with rice bran, and the moisture is adjusted to give a culture medium. A hypha of an agaric is inoculated into the culture medium and cultivated at about 20W25°C for 20 days. The resultant hypha mass growing on the surface of the culture medium is collected, and water is then added and boiled to extract the hypha mass. The extract is concentrated to prepare a hypha mass extract of the agaric. The resultant extract is then dried to give a hypha mass powder of the agaric. The extract and the powder contain the following components: Protein, 1.4%; lipid, 0.16%; glucide, 3.0%; amino-form nitrogen, 0.141%; nucleic acid-related substances, 0.014%.
