Abstract

PURPOSE: To obtain mycelia of fungi belonging to the genus Tricholoma, e.g. matsudake mushrooms, useful for food, readily in large quantities, by incubating the fungi inoculated in a medium containing a starch in a high concentration according to the aeration spinner culture method.
CONSTITUTION: Fungi, e.g. Tricholoma matsutake S. Ito IFO30588(FERN-P No. 4758) or Tricholoma bakamatsutake Hongo sp. nov. IFO30586 (FERM-P No. 4756), which belong to the genus Tricholoma, are incubated in a liquid medium containing 3W/V% of more, preferably 4W10W/V%, of a starch, e.g. rice, wheat, potato, or corn starch, at about 20W27°C and an air flow of 10W150% for 20W60 days, preferably by the submerged aeration spinner culture method to give mycelia and culture comprising the aroma component. The component is then extracted and added to impart the aroma to food.
