Abstract

PURPOSE: To prepare soy sauce having high glutamic acid content, by using a glutaminase-producing fungi belonging to Rhodotorula genus in combination with KOJI(malted rice for preparation of soy sauce).
CONSTITUTION: In the preparation of soy sauce by conventional process, the fermentation is carried out in the presence of a glutaminase-producing fungi belonging to Rhodotorula genus, e.g. Rhodotorula rubra, Rhodotorula glutinis, etc., together with seed KOJI by adding the fungi and the seed KOJI to the fermentation tank at the initiation of the fermentation.
