Abstract

PURPOSE: Rice or malted rice is smoked or roasted with peat and mixed with a sake mash and they brew Japanese sake with whiskylike smoke odor and more unique taste than traditional whisky.
CONSTITUTION: Rice or malted rice is smoked with peat, for example, at 60°C, then roasted, for example, at 95°C for 3hr to convert the starch into the alfa-form and simultaneously dry to an extent of about 6% water content. The resultant smoked rice is used to prepare a mash for Japanese sake and subjected to single or parallel mult-stage fermentation.
