Abstract

PURPOSE: To prepare a mandarin orange wine having unique flavor and sweetness, by fermenting an orange juice neutralized with sodium bicarbonate, in the presence of an enzyme.
CONSTITUTION: A mandarin orange juice is neutralized with a small amount of sodium bicarbonate, and mixed with an adequate amount of sugar. The mixture is fermented with an enzyme, then mixed with an adequate amount of sugar after about 24hr, and further fermented. The fermention is repeated about 8W10 times while adding sugar, and the resulting wine is stored for about 2 months.
