Abstract
PURPOSE: To prepare a sweet sake containing more unfermentable oligosaccharide than glucose, having the refreshing sweetness, and capable of giving a feeling of good body taste, by charging raw materials for the sweet "sake" with an enzymic agent containing a transglucosidase, etc.
CONSTITUTION: In a process for preparing a sweet sake by the conventional method, an enzymic agent obtained by incorporating a transglucosidase, α-amylase and acidic protease therein is directly added to raw materials, or part or all of the rice koji is replaced with the agent and charged into the raw materials for the sweet sake.
