Abstract

PURPOSE: To manufacture a sweet seasoning containing alcohol, similar to "mirin", easily, by immersing nonglutinous rice in water containing α-amylase at a sepcific temperature, steaming the rice, and saccharifying and aging the steamed rice in an alcohol solution in the presence of malted rice.
CONSTITUTION: Nonglutinous rice is immersed into an aqueous solution containing α-amylase, pref. heat-resistant amylase originated from Bacllus, at 45W75°C, pref. 50W70°C, for 6W24 hours, pref. 16W18 hours. The amount of the α-amylase is 0.1W2 wt%, based on the starch of the nonglutinous rice. The swollen rice is steamed, and charged together with malted rice into a 25W45% concentrated alcohol solution, and saccharified and aged at 20W30°C for 20W60 days. After the aging, it is pressed, squeezed, and filtrated at room temperature, to obtain the alcohol-containing sweet seasoning similar to "mirin (sweet sake for seasoning)".
