Abstract
PURPOSE: To subject a food containing starch essentially to an antifungal treatment without degrading the sense of eating or taste thereof, by bringing the food into contact with acetic acid or an equivalent material.
CONSTITUTION: Acetic acid or an equivalent material, e.g. vinegar, sodium acetate or calcium acetate, in amount of 0.04W1.0wt%, preferably 0.1W0.5wt%, based on a food containing starch essentially, e.g. a rice cake, wheat vermicelli or bread, is incorporated in the food or applied to the surface of the food product.
