CONSTITUTION: Acetic acid or an equivalent material, e.g. vinegar, sodium acetate or calcium acetate, in amount of 0.04W1.0wt%, preferably 0.1W0.5wt%, based on a food containing starch essentially, e.g. a rice cake, wheat vermicelli or bread, is incorporated in the food or applied to the surface of the food product.
