Abstract
PURPOSE: To provide a preservative capable of keeping a food from the deterioration by microorganisms such as bacteria, fungi, yeasts, etc., economically, in an industrial scale, by the use of a homogeneous solution containing specific amounts of acetic acid, sodium acetate and an alcohol.
CONSTITUTION: A homogeneous solution of 100pts.wt. of acetic acid, 80W5pts.wt. of sodium acetate, if necessary, 10W1pts.wt. of phytic acid, and 50W5pts.wt. of an alcohol (e.g. ethanol). The acetic acid is a brewed or a synthesized one, and the concentration may be ≥4% or 100%. The preservative may be added to foods in the form of liquid or as a mixture with a carrier such as starch to improve the storability. It is harmless to human body, easily applicable to the foods without giving undesirable taste and odor to the foods, and has excellent preserving effect.
