Abstract
PURPOSE: To prepare a food having improved sterilization effect and raised shelf stability, by preserving a food or a raw material food at a low pH value using an organic acid, followed by sterilizing it under heating.
CONSTITUTION: To a food or a raw material food an organic acid or the organic acid and its salt such as citric acid or citric acid and glutamic acid, the food is adjusted to a pH of ≤5.5, allowed to stand alone at least for ≥2 days, preferably 5W7days, and sterilized under heating or preheated at 60W95°C and sterilized under heating.
