Abstract

PURPOSE: To reduce the pH of a food without damaging the taste of the food and to obtain a food having improved sterilizing effect and shelf stability, by adding citric acid and glutamic acid as essential ingredients to the food.
CONSTITUTION: Citric acid and glutamic acid as essential ingredients are blended with their salts, ascorbic acid, aspartic acid, malic acid, fumaric acid, other organic acid, amino acid, and their salts in a proper combination, or blended with further with a taste improver, especially an acidity relieving agent, to give a blend. The blend is added to a food which is adjusted to a pH of ≤5.5 and sterilized at ≤100°C.
