Abstract
PURPOSE:To obtain a beverage containing polyphenols without causing clouding and precipitates and affecting taste even in preservation for a long period, by blending polyglutamic acid (salt) with other ingredients. CONSTITUTION:A beverage obtained by blending polyglutamic acid or an edible salt thereof (preferably sodium salt) in an amount of preferably 0.01-0.3wt./ vol.% with a beverage (e.g. coffee) containing polyphenols. Furthermore, the molecular weight of the polyglutamic acid is preferably 200,000-500,000.
