Abstract

PURPOSE: To obtain a preservative having improved antimicrobial activity, by decomposing pectin present in a wide range of fruits, vegetables, etc., and using the resultant decomposition product having a specific molecular weight as a principal component.
CONSTITUTION: A preservative containing a decomposition product of pectin having a molecular weight of 600W5,000, and one or two or more selected from the group consisting of ethanol, glycine, sodium acetate, ascorbic acid, sodium ascorbate, glycerol ester of a fatty acid, common salt and ethylenediaminetetraacetic acid (EDTA) as active constituents. In the decomposition with an acid or alkali, the pectin is decomposed to a suitable extent, neutralized to stop the decomposition reaction to give the aimed decomposition product having the molecular weight in the range of 600W5,000.
