Abstract

PURPOSE: To prevent the discoloration of vegetables such as skinned burdock and taro, by immersing the vegetable in an acidic soft water at pH2W5; and to improve the above discoloration-preventive effect by adding a chelating agent, a reducing agent, a harshness-removing agent, etc., to the acidic water.
CONSTITUTION: Vegetables such as skinned burdock and taro are immersed in an acidic soft water of pH2W5 prepared by treating ground water or city water with an ion-exchange resin regenerated with hydrogen chloride. The discoloration-preventive effect of the above acidic soft water can be improved by adding (A) 0.2W20% of a mixture of sodium hydrogen metaphosphate, citric acid, potassium metaphosphate, and alum and/or (B) 0.2W20% of ascorbic acid, sodium ascorbate, alum, citric acid, sodium chloride, and sodium metaphosphate. The weight ratios of the above components are arbitrary.
