Abstract

PURPOSE: Green beefsteak plant, which is treated with aqueous alcohol to remove the bitterness with no adverse effect on its taste, is added, as an ingredient, to giaoz to produce storable giaoz (a Chinese dish, dumpling stuffed with minced pork) having the refresh taste of the green beefsteak plant free from bitterness.
CONSTITUTION: Oil, minced pork, vegetable protein, vegetables and other ingredients are mixed and heated at about 95°C for 2W3hr and the mixture is combined with finely cut green beefsteak plant which is previously dipped in an aqueous alcohol of 15W40% concentration for at least 4W5hr. The resulting ingredient is made into dumplings using a coating made by a usual method and the dumplings are steamed at about 85°C for 2W4min and cooled for storage.
