Abstract

PURPOSE: To obtain a preservative for a food and drink from a natural material as a raw material, by utilizing a decomposition product of pectin having the antimicrobial activity.
CONSTITUTION: Pectin is decomposed to give a decomposition product thereof having a molecular weight of 600W5,000, and the resultant product is used as an active constituent. The pectin is decomposed by the two following methods: With an acid or alkali and an enzyme. Hydrochloric acid or sulfuric acid, etc. may used as the acid, and caustic soda, caustic potash, etc. may be used as the alkali. Pectinase and a mixture thereof with another enzyme containing the same as a component is may be used as the enzyme.
