Abstract

PURPOSE:To reduce or eliminate smell of acetic acid emitted from a food preservative and simultaneously obtain the food preservative having improved preservation quality of a food, by adding chitosan to a food preservative consisting essentially of acetic acid or an alkali metal acetate. CONSTITUTION:A food preservative obtained by adding preferably about 3-6g, preferably about 4-5 g chitosan to 1l solution of the food preservative consisting essentially of an active ingredient, such as trees and plants.vegetables.grains, or acetic acid and/or an alkali metal acetate is added to a processed food, such as uncooked noodles, pickles or 'MISO' (paste of fermented beans). The amount of the added food preservative is normally within the range of about 0.5-3%.
