Abstract
PURPOSE:To obtain a food preservative with hardly any smell of acetic acid without impairing flavor of a food, by adding chitosan to a food preservative solution consisting essentially of acetic acid, etc. CONSTITUTION:The aimed food preservative obtained by adding chitosan to a food preservative solution consisting essentially of acetic acid or an alkali metal acetate. Furthermore, the amount of the chitosan added is preferably 4-5g based on 1l aqueous solution of the acetic acid, etc.
