Abstract

PURPOSE: A nice noodle prepared by incorporating crushed grains of the rinds of citrons and SHIITAKE mushroom powder with wheat flour, and having a unique fragrant aroma and flavor and high nutritive value.
CONSTITUTION: Crushed grains of the rinds obtained from about five citrons and powder of about ten dried SHIITAKE mushrooms are added to 2kg wheat flour, and if necessary adequate amounts of dogtooth violet starch, egg yolk, etc. are added to the resultant mixture and kneaded with water. The resultant noodle dough is then made into an uncooked noodle by the conventional method. The method described above may be applied to SOBA noodles (buckwheat vermicelli).
