Abstract

PURPOSE: The main raw materials for dried noodles are combined with specific amounts of water and salt to prepare a pasta for noodles and noodle strings made therefrom is dried at 10W20°C at least at the beginning, thus permitting the time for boiling noodle to shorten and imparting soft texture.
CONSTITUTION: Wheat flour or a mixture thereof with buckwheat flour is used as the main starting materials and 100pts.wt. of the material are combined with 38W 50pts. of water, 4W10pts. of salt, when necessary, other approporiate additives to prepare the pasta for noodles. After the pasta is made into noodle strings by a usual method, the strings are dried at 10W20°C at the bignning in the total process for drying or before the standing step. The resultant dried noodles have more porous structure than conventional noodles so that the boiling time can be shortened and the color of the dried noodles becomes whiter.
