Abstract

PURPOSE: Wheat flour, together with water, is kneaded, pressed formed, converted into α-form starch, and dried by irradiating microwaves, thus making it possible to mass-produce instant macaroni of good taste inexpensively.
CONSTITUTION: General wheat flour, semolina or farinha is kneaded with water to form a dough, which is pressurized over 100kg/cm2, then formed into sheets 1mm thick or strings of 1mm diameter. Then, these sheets or strings are boiled to convert the starch to α-form and dried with microwaves so that the water within the sheet or string is made to jet out to form pores. Further, these sheets or strings are dried to give the objective instant macaroni. The resultant instant macaroni softens within a few minutes in hot water and can be eaten by cooking appropriately as in conventional macaroni. It is presumed that it has porous structure and hot water rapidly soaks thereinto to soften the macaroni in a shortened time.
