Abstract
PURPOSE: To prepare NATTO (fermented soybean) containing adlay, completely free from the characteristic smell of adlay, and having moderate feeling to the teeth, excellent palatability, appetizing flavor, and high slimy consistency, by using soybean and polished adlay converted to α-starch as raw materials.
CONSTITUTION: Polished adlay is soaked in water to attain a water-adsorption coefficient of ≥ about 1.27, drained, heated with steam under a gauge pressure of ≥ about 1.0kg/cm2, and dried with hot air to obtain polished adlay converted to α-starch. The adlay thus prepared and soybean are immersed in water, and steamed. The mixing of the processed adlay and the soybean is carried out before or after the water immersion or before or after the steaming, pref. before immersing in water. The steamed mixture is inoculated with Bacillus natto, and fermented by conventional process.
