Abstract

PURPOSE: To obtain fermented soybean and adlay having soft adlay seeds and good teste free from the adlay smell of its own, by fermenting the boiled and steamed mixture of adlay seed and soybean with bacillus natto.
CONSTITUTION: In a process where adlay seeds and dried soybeans are soaked directly in water, preferably after baking and/or dividing, and steamed and boiled, at any stage before or after soaking or steaming or boiling, preferably in soaking or removal of water, 1W4pts.wt. of adlay seeds is blended with 9W6pts.wt. soybean to give a boiled and steamed mixture, which is inoculated with bacillus natto and fermented.
